Red Wine Chocolate Sauce

Gourmet hot fudge. Why not?

There is very little that I love more than red wine paired with dark chocolate. It’s my favorite late night snack combo. Both flavors have such depth and, in my opinion, pair perfectly together.

Food soul mates.

If you want to get sentimental about it.

And I definitely do.

However, if you are at all nervous about alcohol. Or just don’t drink wine. That’s totally cool too. You can still make some pretty killer diller (and super easy) hot fudge, just leave the wine out and add a few tablespoons of cream.

Red Wine Chocolate Sauce, makes about 3 cups.

Needed: 1 cup red wine (I used a Zinfandel, but any red wine with hints of berries would be perfect), 2 cups chopped dark chocolate and 1/2 cup light corn syrup.

In a small pot boil the wine. Reduce the heat just a little and continue to cook for 10-12 minutes until the wine reduces (there should be less than 1 cup now, and it will get a little thicker and darker). Now reduce the heat to a simmer and add the chocolate and corn syrup. Whisk as it all melts together. Once it’s all melted continue to cook or 2-3 minutes just until it thickens slightly. Let it cool just a bit before serving.

Note: this sauce is REALLY delicious and may cause you to eat lots of ice cream… You’ve been warned.

You can store this sauce in an airtight container in the refrigerator for 3-5 days after making it. (Note: it will get thicker and less, uh, saucy as it cools in the refrigerator. So warm it up again if you want that ooey gooey consistency. Yes, that’s a thing.)

Enjoy! xo. Emma

Gwen December 12, 2011 at 4:42 pm

Mmmm, how fancy. Do you think this would work with simple syrup instead of corn syrup?

Emma December 13, 2011 at 3:14 am

probably, but it would be much thinner in consistency. if you don’t like corn syrup you might try brown rice syrup.
