Stuffed Mushrooms

I love mushrooms. Like, a lot. So I’m constantly trying to dream up new mushroom dishes any chance I get. These are pretty simple to throw together and really delicious.

They gots the crunch.

They gots the ooey gooey cheese.

They gots the deliciousness of mushrooms paired with garlic and onion.

They is…. uh… good.

(I is bad at grammar today.)

Needed: mushrooms, bread crumbs, 2-3 tablespoons minced garlic, 1/4 cup chopped scallions, a few tablespoons butter and olive oil and 1/2 cup (or more if you’re feeling it) shredded mozzarella cheese.

In a pan saute the garlic and onions in equal parts butter and olive oil, toss in bread crumbs and cook together for a minute or two. Set aside. In the same pan saute the (washed) mushrooms for a few minutes on each side. Then stuff with filling and top with cheese. Let it melt before serving.

These look so yummy! My mouth is literally watering. Too bad my new found college lifestyle means living on Apple Cinnamon Poptarts and Cheetos. I miss real food like this!

What kind of mushrooms did you use and how did you prep them? I’ve never stuffed mushrooms before…Im guessing you cut off the stem and stuff the underside of the mushroom…?

Thanks so much for the mushroom recipe. We’ve just planted our own vege patch using some mushroom compost and SURPRISE, we have more mushrooms than we know what to do with! Super yummm!

Yum! Those look amazing! I’m such a fan of stuffed mushrooms… you can pretty much put anything in them and they taste delicious! I like the addition of the scallions. Thanks for sharing!
