Needed: mushrooms, bread crumbs, 2-3 tablespoons minced garlic, 1/4 cup chopped scallions, a few tablespoons butter and olive oil and 1/2 cup (or more if you’re feeling it) shredded mozzarella cheese.
In a pan saute the garlic and onions in equal parts butter and olive oil, toss in bread crumbs and cook together for a minute or two. Set aside. In the same pan saute the (washed) mushrooms for a few minutes on each side. Then stuff with filling and top with cheese. Let it melt before serving.
