Spiced Honey Nut Muffins

These muffins were going to have fruit in them.

I thought I had strawberries.

But I did not.

I thought I had a few ripe bananas.

But I did not.

I did have a few apples, but it just seemed too much all of sudden. I mean, who needs fruit anyway!

(*Note: I am just kidding. Fruit is an important part one’s diet. Please don’t stop eating fruit on my behalf.)

But I did think a simple, nutty and flavorful muffin might be nice. Delicate and delicious just out f the oven, and perfect warmed up with a little bit of butter later in the day. So I went for it. This recipe makes a dozen, and they didn’t last more than 24 hours at my house.

So I’d say that’s a pretty good sign.

Spiced Honey Nut Muffins, makes 12 standard size.

Needed: 1 stick (1/2 cup) softened butter, 1 cup sugar, 2 eggs, 1 1/3 cup flour, 1 teaspoon baking soda, 1 teaspoon salt, 1/2 cup sour cream, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/2 cup nuts (plus more to sprinkle on top) and honey to drizzle on before baking.

In a bowl cream together sugar, softened butter and vanilla. Add in eggs, stir until just combined. Add in flour, baking soda, salt and spices. Stir until just combined. Stir in nuts.

Fill lined baking cups 2/3 full with batter. DO NOT OVERFILL. Sprinkle on top a few more nuts and then drizzle each muffin with honey. Bake at 350 F for 20-25 minutes.

Wow, these sound yummy! I love muffins – give me a big fat rustic muffin over a fany iced cupcake any day. And nutty spiciness? I don’t know about Missouri but autumn has definietly arrived here in the UK, so they couldn’t have come at a better time!

I like the addition of sour cream. I’ve used it pretty often in chocolate cakes to keep them from getting dry, so I bet it would be perfect for muffins. They look scrumptious!

Okay, I’m finally going to get to telling you this — your right-hand column of ads/info, etc overlaps with your blog posts (just the pictures) for me. A good 3/4 of an inch… maybe your blog designer can look into it? I’m using firefox…

with or without the fruit…..i think they sound tasty! a dozen muffins never last longer than a day at our house either. sad!

They look delicious! I’ve discovered recently spiced dessert recipes and I absolutely love them, so spiced honey nut muffins sound heavenly to me.

okay these look delicious. in fact, i’ve got a batch in the oven right now. however, your instructions didn’t mention when to add the sour cream….also, i made 18 standard size & well, they have over-flown in the oven…that being said, i can’t wait to taste them, the timer just went off! :)

I didn’t have fruit. Or nuts. So I put in homemade granola instead. And substituted plain yogurt for the sour cream. Excellent!
