My apologies to anyone who cannot eat soft cheeses.
It's that melty, oozy brie is just so darn good on everything.
I can't help myself.
I actually made these a few weeks ago. Yes, weeks. As in plural. Sometimes I make a yummy dish then I eat too much, then I have food coma, then I wake up and edit my photos, then I am hungry again and I go make something.
The cycle continues. And I forgot to post these little darlings. Poor little neglected mushrooms…
Brie Stuffed Mushrooms, NOT adapted (it was already perfect) from here.
Ingredients: 1 package button mushrooms, 2-3 tablespoons of butter, 3 cloves of minced garlic, 1/4 cup chopped parsley, 3-4 chopped green onions, one wedge of brie.
Rinse and remove the stems from the mushrooms, set aside. In a saucepan melt butter and lightly saute garlic and onions, set aside. In the same pan lightly saute the mushrooms, until both sides are light brown. Place mushrooms (hole side up) in a baking dish and fill with cubed brie, then sprinkle on garlic, onions and parsley. Bake at 350 F for 10-15 minutes until cheese is melted, serve hot.
