I make waffles fairly often. They are the boyfriends favorite. And what's not to love: warm, lightly sweet bread with pockets to hold melty butter and gooey syrup. Waffles are da' bomb. Does anyone say that anymore?
No. Just me. How embarrassing.
And this waffle recipe truly is perfect. It yields waffles that are crispy on the outside while being light and springy on the inside. Waffle perfection.
I have been wanting to try/adapt this recipe for a while now. Basically because it's called "Waffle of Insane Greatness" which I thought was a little lame. Until I tried them. Now I eat my words because they are insanely great.
Ingredients: 3/4 cup flour, 1/4 cup cornstarch, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 cup buttermilk, 1/3 cup vegetable oil, 1 egg, 1 1/2 teaspoons brown sugar and 3/4 teaspoon vanilla.
Combine flour, cornstarch, baking soda, salt and sugar. Then mix in buttermilk, oil, egg and vanilla until just combined. Cover bowl and let batter sit at room temperature for 20-30 minutes. Heat waffle iron (do not spray with non-stick spay, you don't need it thanks to the oil in the batter) and cook waffles according to your waffle irons directions. Yields around 4 medium sized waffles.
