DIY Breakfast Cereal

Breakfast cereal's are absolute staples at my house. I love Fruity Pebbles and Coco Puffs as much as the next girl, but I'm not always in the mood for something sweet in the morning. So as an attempt at a healthier (and, as it turns out more environmentally friendly) alternative to my favorite General MIlls indulgences I decided to make my own breakfast cereal.

 Ingredients: 3 cups red wheat puffs, 3 cups brown rice puffs, 1/3 cup sliced almonds, 1/2 dried cranberries, 1/2 cup maple syrup and a generous sprinkling of brown sugar.

You maybe be wondering, "What are rice (or wheat) puffs?" I checked on the packages ingredients labels and they only had one ingredient each (you can probably guess:) I don't know how you make brown rice puff up, maybe it's like popcorn. But I always breath easier when something I am about to eat has less than five ingredients listed on it's package. And I am especially happy if I can pronounce them all. Plus these puffs, however they were made, came from my own sunny California. So I know that whatever truck brought them to the store I bought them at did not travel across the county, using all that fuel and pumping out all the fumes it would take to travel long distances like that. So this cereal is somewhat local. Technically I think it counts as my 22nd Urban Eats recipe. Yay!

 In a large bowl combine: puffs, nuts and dried fruit. Drizzle maple syrup over cereal and mix well so that most cereal pieces get at least a little maple syrup coasting. Generously sprinkle brown sugar over the cereal. Cover a baking sheet with parchment paper (or aluminum foil) and spread cereal over sheet evenly.

Bake at 250 F for 10-12 minutes. Enjoy with milk and maybe some hot chai tea. Store remaining cereal in a gallon size zip lock bag. Other cereal add in ideas: bran cereal pieces, oats, mini marshmallows, sprinkles, other chopped nuts or dried fruit pieces, etc.
